How can I help my husband become a better vegetarian?

My husband is a vegetarian, I am almost a vegan (I still eat cheese but nothing else of which has animal products, I am strict except cheese.. but this is irrelevant). He only tends to eat pasta and cheese and maybe a salad every now and then. How can I help him eat more actual veggies instead of being a ';pastatarian'; lol.How can I help my husband become a better vegetarian?
Play a game where he picks a ';theme veggie'; for a meal and the two of you cook it together. I do this with new veggies. I'll look up recipes for a vegetable I've never had, buy it, then make it.How can I help my husband become a better vegetarian?
Roast or grill some veggies on the grill - onions, peppers, mushrooms, squash, zuchinni, etc. - and have him toss them with EVOO or balsamic vinegar and add them to his pasta. Then he won't be giving up his pasta, but will be getting veggies as well.
Make him some vegatarian food covered i ncheese like raclette. Use vegetarian culinary delicious recipes - http://vegetarianculinary.co.cc and make him suprised !
I see two ways of going about this:

1) Show him the videos on how animals and animinal product are handled on farms and in ';food'; companies.

or

2) Introduce him to more yummy alternatives.
Try to impress him by attractive/ tasty / nutritious variety of veg*n culinary!
kill the animal in front of him cook it and say here eat hardy .. that was his name hardy
When he passes out from malnutrition, he'll get the hint to widen his diet.
buy him a nice juicy steak.....!
